
I’m always testing new ways to make my desserts feel fun and celebratory, and one of my customer favorites has been the Birthday Cake Fatcaron. This post isn’t a full recipe tutorial — instead, it’s an idea post to show you what goes inside mine and why it’s been such a hit with customers. If you already bake macarons, this is an easy product to add to your menu (and trust me, people love it!).
What’s Inside the Birthday Cake Fatcaron
Here’s a quick breakdown of what makes this Fatcaron so special:
- Macaron Shells → Use your favorite macaron recipe, or grab my classic macaron recipe here if you want to try the one I’ve perfected.
- Buttercream + Sprinkles → Any vanilla buttercream works, but I love adding colorful sprinkles right into the frosting for that true birthday cake vibe. (My buttercream recipe will be available soon — stay tuned!)
- Cake Truffle + More Sprinkles → This is the secret surprise inside. It’s simply cake and frosting mixed together into a soft truffle, with even more sprinkles folded in for texture.

When baking fatcarons am using the convection oven setting 270F for 22 minutes. Every oven is different so adjust temperature and timing that best suits your oven.
When Assembling
- Pipe a donut shape of sprinkle buttercream onto your Fatcaron shell, leaving an empty space in the center. I usually pipe about three swirls high so the Fatcaron is nice and thick, but you can adjust depending on how much filling you want.
- Roll a cake truffle that fits snugly inside the empty space and place it in the center.
- Add a small dollop of buttercream on top of the truffle so the second shell sticks, then gently sandwich the Fatcaron together.
