⚠️ Important Note 

This recipe uses the Italian meringue method, which involves cooking sugar syrup to 118°C (244°F). While that might sound intimidating, I actually failed at macarons many times with the French method — and the Italian method was the very first one that worked for me. It’s more stable, more reliable, and it’s the exact method I use every day in my bakery.

Required equipment:

  • Kitchen scale (ingredients are measured in grams for accuracy)

  • Candy thermometer or digital thermometer (for sugar syrup)

  • Stand mixer or hand mixer

  • Piping bags with round tips (#12 or #2A recommended)

  • Baking trays lined with Teflon sheets, silicone mats, or parchment

  • Sifter or fine mesh sieve

Optional but helpful:

  • Food processor (if your almond flour isn’t superfine)
